Can I choose these courses in college?

Hey I want to be a personal trainer and learn during college and was seeking to take courses and there is a lot of them. I wondered if I was allowed to take all these courses as biomechanics, sports nutrition, fitness assessment, exercise program design, communication and leadership skills, and anatomy and kinesiology and a few others. You are allowed to take the courses you want in a college? Or should I wait a year and then start adding the courses? And lets say you get a scholarship on top of all this. (A scenario with a scholarship and one with which, or it makes a difference?) And finally, if you can tell me any more courses you know, Please list:) Thanks in advance
